Bizarre World: Wisconsin

Wisconsin, the Dairy State, is a land of 15,000 lakes and 1.2 million cows. Wisconsin cows produce billions of gallons of milk yearly, which turns into billions of pounds of cheese. With some of the best cheese and beef in the nation, Wisconsin is a food paradise.

Andrew first heads to a meat market near Lake Tomahawk in northern Wisconsin. The Lake Tomahawk Meat Market makes its own sausage in-house, and they have an incredible assortment of sausages. As a treat for Andrew, owner Todd Ahrensdorf prepares a special bratwurst. The main ingredient is Lutefisk which is a dried codfish, soaked in rye and rinsed in water until it is like a fermented fish gel. Todd even has a name for his creation: “The Snot-brat.”

Andrew later heads to Milwaukee, a city that has been shaped by every new wave of immigration. It has helped to develop the city a rich assortment of ethnic food. Andrew gets a taste of some beef stomach tacos at one of the cities oldest mexican groceries, and some duck blood soup at an authentic Polish restaurant.

No trip to Wisconsin is complete without having some cheese so Andrew heads head to one of the last remaining factories that makes Limburger cheese. The process for making Limburger cheese is the same as many other cheeses, but there is an extra step. While the cheese is curing, it is drenched with bacteria (the same bacteria that is found on human skin producing body odor). This is why limburger is famous for being one of the smelliest cheeses.
